Do you know a cupcakes recipe without a cake mix?

I would like to make non-chocolate cupcakes for my son's birthday. I have a bunch of flower, sugar, standard baking ingredients, frosting, and decorating sprinkles. I don't have sour cream or cream cheese. Got eggs and butter. Can you help with the recipe? I've looked online and only saw recipes with cake mixes. Thanks!

FRESH APPLE CUPCAKES





2/3 c. all-purpose flour


1/3 c. whole wheat flour


1/3 c. sugar


1/2 tsp. baking soda


1/2 tsp. ground ginger


1/3 c. vegetable oil


1 egg


1 1/3 c. cored, chopped apple, unpeeled


1 tsp. vanilla extract





Preheat oven to 350 degrees. Line 6 muffin cups with paper or foil baking cups. Sift the flours, sugar, baking soda, and ginger together into a bowl. Add the oil, egg, apple and vanilla and stir just until all of the flour is mixed in. Divide the batter among the lined muffin cups. Bake the cupcake until they are puffy and nicely browned, 35 to 40 minutes.

Cupcakes


makes 24 cupcakes


350 degree oven





1 stick butter


1-1/4 cups sugar


2 packets instant thai ice tea


2 cups all purpose flour


2 teaspoons baking powder


1/2 teaspoon salt


1 cup milk


1 teaspoon vanilla extract


4 large egg whites





1. soften butter in the mixer on high speed


2. mix instant thai ice tea powder and sugar together


3. drizzle the sugar mixture in with the butter and beat until light and fluffy, about 2-3 minutes


4. sift flour, baking powder, and salt together


5. mix the milk and vanilla together


6. add the flour mixture and milk mixture to the butter/sugar in 3 parts alternating between flour and





milk and beating well after each addition


7. set aside incorporated mixture


8. in a clean mixer bowl, beat egg whites until soft peaks form


9. fold egg whites into cake batter until incorporated


10. scoop batter into the prepared cupcake pans


11. bake in the 350 degree oven for approximately 20 minutes or until a cake tester comes out clean

INGREDIENTS:


3 eggs


2 cups white sugar


3 tablespoons butter


3/4 cup all-purpose flour


2 cups milk


1/2 teaspoon vanilla extract





DIRECTIONS:


Preheat oven to 325 degrees F (165 degrees C).


In a blender, combine eggs, sugar and butter. Blend until smooth. Pour in flour and milk, a little at a time, blending until smooth again. Stir in vanilla.


Pour into muffin tins, filling 3/4 full. Bake in preheated oven 45 minutes, until golden brown. Serve hot or cold.

1 1/2 cups flour


1 cup sugar


1 teaspoon baking soda


1 teaspoon salt


1/3 cup cocoa powder


1/2 cup vegetable oil


1 cup water


1 teaspoon vinegar





Mix all of the ingredients well with a mixer. It should be brown and smooth. Free of lumps. Bake at 350°F for 25 minutes. Cupcakes will turn out moist and delicious.





Buttermilk or milk may be substituted for water. Melted butter may be substituted for oil.
Reply:Any standard cake recipe can be used as cupcakes. If there is an even amount of eggs, sometimes I cut the recipe in half. A regular recipe will make 2 dozen cupcakes.
